The ancient traditions of Japanese samurai sword-making meet today’s state-of-the-art steel technologies in the Shun Elite series of knives by Kai. Unique to these knives, the Shun Elite line features a unique core of SG2 ‘Super Steel’ powdered metal, hardened to 64-66 Rockwell (compared to the 56-58 Rockwell of most kitchen knives), resulting in an exceedingly sharp and smooth edge. This “Super Steel” starts out in a powder form that under heat and extreme pressure combines to make a dense alloy that in turn creates one of the finest molecular crystalline structures used in knife making today. The result is an edge that will stay sharper longer that any on the market today. For added protection and strength, the SG2 is clad between two layers of SUS410, a softer stainless steel that provides strength, flexibility and corrosion protection. For beauty and tireless handling, the Shun Elite feature Ebony-black Pakkawood® handles that are ergonomically designed with an elliptical cross-section, featuring a stainless steel bolster for maximum comfort and control. A mosaic pin is inlayed into each handle and thin rings of copper and brass between the handle and bolsters are added to define it as the ultimate in cutler’s art.
