VB0720 Shun Sora

14cm (5½’’) Santoku [Vegetable Knife] with Granton Edge

Stocking your kitchen is all about getting the tools that work best for you. May we suggest you try the Shun Sora 5½” Santoku? In size, it’s between Kai’s small and full-sized Santoku. This in-between weight and size make it perfect for medium-sized kitchen tasks, from slicing carrots and shallots to chopping herbs to cutting chocolate or butter. Cooks with smaller hands or those who simply prefer a smaller, lighter knife may find that this smaller Santoku becomes a top go-to knife. Some cooks have told us they use it in place of a paring knife for some tasks or love it for cutting up fruit for breakfast.

Product Description

In Japanese, Sora means “sky.” Sora flies sky-high with Kai’s proprietary Composite Blade technology that brings together a VG10 San Mai cutting edge with a mirror-polished Japanese 420J2 stainless steel upper. This technology puts high performance material exactly where it’s needed, on the edge. The two blade sections are laser cut, then fit together like pieces of a jigsaw puzzle. Braze welding permanently joins them. The attractive wavy pattern at the joint is based on traditional Japanese sword hamon lines. The blade shapes and handle design are traditional Japanese. The textured TPE polymer handle provides a secure grip and balance; it’s also easy to maintain.

In Japan, “shun” (pronounced shoon) is the word used to describe local, seasonal food at the very peak of its flavor and freshness. Shun is a time—the exact moment—when a fruit has reached its perfect ripeness, when a vegetable is at its very best, when meat is at its most flavorful. Home cooks and professional chefs alike celebrate shun in their kitchens, eagerly awaiting each season’s bounty and serving every ingredient in its proper time. Kai named their fine cutlery Shun to honor this tradition of seasonal, mindful eating and as a mark of their dedication to making kitchen cutlery that is always at the peak of its perfection, too.

So now you know; just say, “Shoon” (rhymes with “moon”) for kitchen cutlery that’s designed to help keep your freshest ingredients at their very best.
