10″ Fine Cut Butcher Steel
Butcher steels do not remove metal from the knife blade to create an edge. They re-align the microscopic cutting teeth that make-up the edge that become deformed during use. Steels are magnetized to capture any of the ‘teeth’ that may be broken-off or worn away from the edge. The finer the ‘cut’ on the steel, the finer the cutting edge.
