Quite simply, “Nakiri” is Japanese for “vegetable knife.” If you haven’t used Japanese-style knives before, the Nakiri is sure to attract your attention due to its interesting shape. Yet this blade shape is quite practical, too. With its blunt tip, the Shun Sora Nakiri is safer to use in the kitchen, but without sacrificing any of the slicing, dicing, and chopping power you need when processing vegetables. Because of its straight blade, edge, and spine, the Nakiri isn’t rocked like a chef’s knife. Instead, use a push cut by moving the knife down and forward while keeping the edge parallel to the cutting surface. If you cut a lot of vegetables for salad or stir-fry, you will simply love using the Shun Sora Nakiri.
CUTTING EDGE TECHNOLOGY—NO PUN INTENDED
In Japanese, Sora means “sky.” Sora flies sky-high with Kai’s proprietary Composite Blade technology that brings together a VG10 San Mai cutting edge with a mirror-polished Japanese 420J2 stainless steel upper. This technology puts high performance material exactly where it’s needed, on the edge. The two blade sections are laser cut, then fit together like pieces of a jigsaw puzzle. Braze welding permanently joins them. The attractive wavy pattern at the joint is based on traditional Japanese sword hamon lines. The blade shapes and handle design are traditional Japanese.
