2½" Bird’s Beak Paring Knife - CTS BD1N / Black Micarta
2½” Bird’s Beak Paring Knife is the classic tool for making decorative cuts such as radish rosettes or fluted mushrooms as well as for cutting out blemishes, peeling, and slicing soft fruits such as nectarines or plums. The curved shape lets you cut close to the peel, keeping more of the fruit or vegetable you’re peeling. The Bird’s Beak is also called the Tournée knife for the highly sculpted tournée cut that this precise little knife makes possible. It’s a specialty knife to be sure, but if presentation is important to your cooking, you’ll want to make this knife part of your collection.
The Apogee Culinary Designs Dragon Series of knives are handcrafted in Seki, Japan by Yaxell. The blades are constructed of one-piece, 3mm thick, high-grade American CTS BD1N Nitrogen steel by Carpenter Technologies. Hardened to HRC63, this vacuum-melted stainless steel containing certain metal additions that offer enhanced blade retention properties and exceptional corrosive resistance. The alloy composition is finely balanced to offer superior edge retention, surface finish, and an ability to be sharpened to a fine edge.
The handles are constructed of high heat-resistant, FDA approved, non-shrink Black Micarta, with three stainless steel rivets. The bolsters that enhance the handles are made of 18/10 stainless steel and provide outstanding stability and balance. These extremely sharp and durable knives are the perfect blend of Japanese craftsmanship and advanced American steel and technology.
