7″ Usuba (Vegetable Knife)
The Usuba Knife is a broad bladed single edge blade with a distinctively curved, flat tip and looks like a cleaver. Usuba knives are traditional Japanese vegetable knives. The word Usuba means “thin blade”, which is perfect for cutting vegetables without cracking or breaking them. It is traditionally used like a paring knife by holding it in the air and is used mainly to cut vegetables such as Daikon and Cucumber into paper thin slices and is so sharp it can thin peel in a continuous strip (katsura-muki) a Tsuma, a Japanese radish which is served with sashimi.
The Asian Precision series feature stamped blades of high carbon, molybdenum vanadium no-stain (stainless) AUS8 steel in traditional Japanese designs. Built for the rigors of oriental restaurant and commercial kitchens, the handles are made of POM (Polyoxymethylene) riveted directly to a full tang for balance and strength. Made in Seki, Japan.
