6½” Deba (Fish/Meat Knife)
The Deba Knife is a heavy, wide and wedge shaped single edge blade with a sloping curve to the tip and looks like a cross between a chef’s knife and a cleaver. It is ideal for separating meat from the bone as well as cutting the bone, scraping the scales, and cutting the head of the fish. It can also be used to cut through the bones and cartilage of poultry.
The Mu knife story begins with the ancient Zen philosophy. When discussing Zen Buddhism, one often encounters the character for emptiness, mu, in expressions such as “no self,” “no ego,” “no holiness,” and “no permanence.” It is through the actual experience of mu — which means transcending affirmation and negation, being and non-being — that satori or spiritual awakening occurs and one can finally come to realize the essential spirit of Zen. The literal translation from Japanese is “none” or “without” meaning that the answer to a question may neither be right or wrong thus leading to the universally derived Mu knife collection. The knives are a fusion of East and West combining the best of both cultures. The bamboo handles are a natural and environmentally friendly material. The steel is vintage high carbon molybdenum vanadium stock that has been expertly heat treated and ground to a razor sharp edge.
