10″ Yanagiba (Sushi / Sashimi Knife, single bevel)
The Sushi or Yanagiba Knife has a long, narrow, single edge, pointed blade that is traditionally used to prepare sashimi, sushi, slice raw fish and seafood. The best way to use this knife is by pulling it through the meat, not sawing or pushing, to create a clean and uniform slice. This is a great knife for any at home or professional sushi/seafood chef. The single edged blade is generally used with a pull cut technique and is used to cut (straight or on a bias) raw fish. The long heavy blade allows for a longer pull cut with less pressure, which helps to hold the shape of the fragile raw fish.
The Mu knife story begins with the ancient Zen philosophy. When discussing Zen Buddhism, one often encounters the character for emptiness, mu, in expressions such as “no self,” “no ego,” “no holiness,” and “no permanence.” It is through the actual experience of mu — which means transcending affirmation and negation, being and non-being — that satori or spiritual awakening occurs and one can finally come to realize the essential spirit of Zen. The literal translation from Japanese is “none” or “without” meaning that the answer to a question may neither be right or wrong thus leading to the universally derived Mu knife collection.
