6½” Santoku (Vegetable Knife)
The Santoku knife, also known as a Japanese Chef’s Knife, is a wide blade knife with an overall thinner spine and taper than a French or German style Chef’s Knife. The word Santoku translates as “3 good things,” (virtues) which means it is versatile like a chef’s knife and cuts vegetables, fish and meat. The thin taper (or blade thickness) is lengthened to give it maximum precision when slicing. The spine runs parallel to the relatively flat cutting edge and only curves near the tip to create a broad bladed knife similar in shape to a cleaver.
The Mu knife story begins with the ancient Zen philosophy. When discussing Zen Buddhism, one often encounters the character for emptiness, mu, in expressions such as “no self,” “no ego,” “no holiness,” and “no permanence.” It is through the actual experience of mu — which means transcending affirmation and negation, being and non-being — that satori or spiritual awakening occurs and one can finally come to realize the essential spirit of Zen. The literal translation from Japanese is “none” or “without” meaning that the answer to a question may neither be right or wrong thus leading to the universally derived Mu knife collection. The knives are a fusion of East and West combining the best of both cultures. The bamboo handles are a natural and environmentally friendly material.
