9” Kanzai Kiritsuke - Dragon Fire / Black & Red Micarta
9” Kanzai Kiritsuke works extremely well with vegetables; julienne, dice, or brunoise with ease. In Japan, the Kiritsuke is known as the master chef’s knife. Use it for all the tasks for which you would use a chef’s knife. It is also an excellent choice for cleaning and portioning boneless proteins, and particularly fish. It slices cooked proteins with grace and ease. With its straighter edge, it will not rock through cuts like a traditional chef’s knife, but once you work with it, you will find yourself reaching for Kanzai Kiritsuke more and more often.
The Dragon Fire Series of knives are handcrafted in China for Apogee Culinary Designs. The blades are constructed of one-piece, 2.5mm thick, high-grade American CTS BD1N Nitrogen steel by Carpenter Technologies. Hardened to HRC63, this vacuum-melted stainless steel containing certain metal additions that offer enhanced blade retention properties and exceptional corrosive resistance. The alloy composition is finely balanced to offer superior edge retention, surface finish, and an ability to be sharpened to a fine edge.
The handles are constructed of high heat-resistant, FDA approved, non-shrink Red and Black Micarta, with three stainless steel rivets. The bolsters that enhance the handles are made of 18/10 stainless steel and provide outstanding stability and balance. These extremely sharp and durable knives are the perfect blend of Chinese craftsmanship and advanced American steel and technology.
