5″ Santoku (Vegetable Knife) with Granton Edge
Granton Edge Santoku knife, also known as a Japanese Chef’s Knife, is a wide blade knife with an overall thinner spine and taper than a French or German style Chef’s Knife. The word Santoku translates as “3 good things,” (virtues) which means it is versatile like a chef’s knife and cuts vegetables, fish and meat. The thin taper (or blade thickness) is lengthened to give it maximum precision when slicing. The spine runs parallel to the relatively flat cutting edge and only curves near the tip to create a broad bladed knife similar in shape to a cleaver. The alternating kullenschliffs (a.k.a. kullens, hollows or grantons) on each side of the knife reduce drag and prevent items from sticking to the blade.
The San Moritz Elite series feature one piece fully forged blades of high carbon, molybdenum vanadium no-stain (stainless) tool steel. Hand sharpened and polished, the blades have a bolsterless Elite edge for incredible sharpness and cutting performance. The handles are made of POM (Polyoxymethylene) molded directly to the integral tang for comfort and strength. Each knife is individually gift boxed. Made in Germany.
