The name “sharpening steel” is somewhat of a misnomer, as this tool does not actually remove metal from the knife blade to create an edge. Steels only realign (burnish) the microscopic teeth that make-up the cutting edge that become deformed during use. These realigned teeth improve the cutting ability of the knife (edge) by reducing the resistance (drag) caused by the previously bent or misshapen teeth thus making the knife perform better; seemingly sharper – thus the misuse of the term “sharpening” steel. Most steels are magnetized to capture any of the ‘teeth’ that may be broken-off or worn away from the edge during the steeling process. The finer the ‘cut’ on the steel, the refined the cutting edge that it will put on the knife.
